Beef Madras


Ingredients

  • black pepper, freshly ground - ˝ teaspoon
  • chillies, dried hot, crushed - 1 teaspoon
  • coriander, ground - 1 teaspoon
  • cumin, ground - ˝ teaspoon
  • garlic, crushed or finely chopped - 2 cloves
  • ghee (butter or oil) - 1 tablespoon
  • ginger, powdered - ˝ teaspoon
  • Lemon Juice - 3 tablespoons
  • Onions, chopped - 3 Medium
  • potatoes, diced - 3 medium
  • rump steak, cubed - 500g
  • Salt - 2 teaspoons
  • Tomato Paste - 1 tablespoon
  • Tomatoes, chopped - 250g
  • Turmeric - 1 teaspoon

Preperation

1. Sauté onions, garlic and chillies in ghee for 5 minutes.

2. While onions are cooking mix coriander, cumin, turmeric, pepper and ginger in small bowl.

3. Add spice mixture to onions and, stirring constantly, cook for 5 minutes.

4. Stir in steak and brown for 10 minutes.

5. Stir in tomatoes, tomatoes paste and 2 cups of water. Bring to boil. Reduce heat, cover & cook for 1 hour.

6. Add potatoes and cook until potatoes and meat are tender.

7. Add salt and lemon juice, mix well and serve immediately.

Note:

1. Cheaper cuts of meat may be used – increase cooking time in step 5.

2. Use fresh ginger – 1cm piece, grated

3. Tinned tomatoes can be used instead of fresh

4. Butter or oil can be used instead of Ghee
