Chicken and Avacado Pasta
Ingredients
- Avacado - 1
- Chicken, Diced - 250 Grams
- Cream, Thickened - 250mls
- Mushrooms - 5 Medium Sized
- Onion, Diced - 1
- Parsely - A few sprigs
- Pasta - 2 Cups
- Tomatoes - 2-3
Cook the Chicken:
Brown the onion along with the chicken in a hot saucepan with a little olive oil.
Simmer:
Add the mushrooms, tomatoes, and avocado, cook for 1 minute, and then add the cream. Stir well and let simmer for 5-10 minutes.
Cook pasta, and Serve:
While simmering, add your pasta into a saucepan of boiling water, and cook for 3 minutes until soft. Add parsley to chicken mixture, and salt+pepper to taste. Serve on top of pasta.
