Herbed Chicken
Ingredients
- Asparagus - 1 bunch
- Chicken Breasts - 1 per person
- Tomatoes - 2 per person
Prepare the Chicken
Start by trimming the chicken breasts, and give them a light covering of the dijon mustard using a brush (or the back of a spoon).
Sprinkle on the thyme evenly and add a little cracked pepper and salt to the chicken before placing it onto a baking tray.
Vegetables
Slice the tomatoes in half, and place them in the baking tray with the flat side facing up Drizzle a small amount of balsamic vinegar on them, along with a drizzle of olive oil and some salt and pepper.
Place the baking tray into the oven and set the timer for 20minutes at around 180 degrees.
The asparagus only takes a few minutes to cook, so save this until just before you're ready to serve. To cook, simply cut in half, and place into boiling water with a few pinches of salt. It will take about 3-5 minutes before they are ready to serve with a little butter melted on top.
