Italian Mince Roll


  • Beef Mince - 1kg
  • Bread Crumbs - 1 Cup
  • Egg - 1
  • Garlic - 2 Cloves
  • Onions, chopped - 1
  • Parmesan Cheese (grated) - 1/4 Cup
  • Pine Nuts - 2 Tablespoons (toasted and chopped)
  • Red Capsicums - 3
  • Spinach - a bunch
  • Tuscan Seasoning - 1 table spoon

Prepare Vegetables

Start by cutting the capsicums into long wide strips (remove the seeds as you go). Grill them skin-side up with a little oil until they start to blacken, and then peel off the skins.

Boil your spinach until the leaves start to wilt, then remove and pat dry.

Preparing the Mince

Mix the mince, breadcrumbs, seasoning, finely chopped garlic, egg, cheese and onion together in a large bowl. Once mixed through, lay down some baking paper and create a ~ 25cm by 35cm rectangle with the mix.

Arrange the spinach leaves over the top of your mince to fully cover it, and then layer the roasted capsicum over the top of this.

Roll and Cook

using the baking paper to help, start tightly rolling the mince into a "roll", then place it into a baking tray.

Cook for about 180 degrees for 50 minutes and serve on rice with a salad - this recipe will easily serve 8 people.
