Mushroom and Rocket Linguine
Ingredients
- Anchovie Fillets - 3-4 fillets
- Button Mushrooms - 8
- Chicken Stock - 4 tablespoons
- Dried Chilli Flakes - 1 teaspoon
- Garlic - 1-2 sliced cloves
- Linguine - 1/4 pack
- Pepper to taste
- Rocket - handful
Start the Pasta
Boil pasta in rapid boiling salted water
Start frying off your ingredients
Whilst the pasta is boiling away, in a hot pan, toss together some olive oil (I had garlic infused oil) with 4 anchovie fillets, thinly sliced mushrooms and garlic and chilli. Add lots of pepper.
Fry everything until the anchovies disintegrate and the mushrooms start to colour.
When the pasta is ready, add the chicken stock to the mushrooms to "deglaze" the pan a bit.
Chuck in a handful of rocket. Reserve a little bit as garnish.
Add mixture to pasta, and Serve.
Chuck pasta ontop of the rocket and mushroom mixture. Add a tiny bit of pasta liquid. The heat will cause the rocket to wilt and turn lovely and sweet.
Toss and serve with more cracked pepper and some fresh rocket.
