Potato and Asparagus in Citrus Sauce
Ingredients
- All Purpose Seasoning - 1 Tablespoon
- Asparagus - A handful
- Lemon - 1
- Lime - 1
- Potatos, Chats - Thinly Sliced
- White Wine - A splash
Par-Boil Potatoes
Start by boiling the whole potatoes in a saucepan for around 5-6minutes, you want them to be soft, but not disintegrating when cutting them.
I often throw the asparagus in for 30seconds or a minute at the end to soften them up a little as well.
Start cooking in the pan.
Slice your potatoes into thin slices, and I just cut my asparagus i half, to leave decent chunks of it.
In a hot pan, add some oil and start cooking the potatoes through, season them while cooking, as well as some salt and plenty of pepper. After they start to brown, add your asparagus, and mix it well for 30seconds to a minute. Squeeze over the lime and lemon, and continue to mix well.
Once the potatoes look sufficiently cooked through and browned nicely, add a splash of white wine, mix and then serve! I served mine with a nice scotch fillet and mushroom sauce.
