Simple Satay Chicken
Ingredients
- Cream, Thickened - 250mls
- Mushrooms - 4-5
- Onion, Diced - 1
- Rice - 2 cups
- Satay Chicken Kebabs - 4-6
- Tomatoes, chopped - 3
Satay Chicken
This recipe is a great example of making do with what you have in the fridge, and takes about 10 minutes to cook from start to finish! It ends up being very cheap since you don't need to buy extra sauces or seasoning.
Start the Rice
Start your rice cooking, either on the stove or in the microwave, so that is is ready at around the same time the chicken is.
Cook the Chicken
Use a fork to remove the individual chicken pieces from the skewers, add these into a frying pan with a little oil, and the onion. Cook until the chicken is golden brown and no longer raw.
Add the tomatoes and mushrooms and cook them through for a couple of minutes, then add the cream. Salt and pepper to taste, and let simmer for a few more minutes.
Serve
Serve the chicken and sauce on top of the rice, along with a fresh green salad!
