Bolognese Sauce
This type of sauce almost has no rules, if you have spare vegetables laying around, you can easily use them, and fresh herbs can make this even more amazing. Not to mention it stores well, and can serve a large number of people very cheaply.
Start by cooking up your onions and mince in a large pot, until browned. Start adding in the garlic, mushrooms, chopped tomatoes and celery, and cook through well - add salt and pepper to taste as you go.
Add crushed tomatoes and season.
Once the vegetables are soft, add in your canned crushed tomatoes and stir well, add in a handful of chopped parsley, the basil and any other herbs you think might go well with it. If the mixture looks a little thick, add a small amount of water to it.
Simmer and start Pasta
Start your pasta boiling in hot, salted water (with a dash of olive oil in it). You can simmer the bolognese while this is happening, keeping an eye on it (add water if needed).
